Classic British Fish and Chips

Fish and Chips are the national dish of UK. In almost every restaurant you can get it. Aslo you can make it home very easily. Fish and Chips is a good combination.

Ingredients

For the Fish:

  • 50 grams all-purpose flour
  • 50 grams cornstarch
  • 1 teaspoon baking powder
  • Salt as required
  • 1 pinch black pepper
  • 1/3 cup water
  • 4-5 fish fillets (thick, white fish)

For the Chips:

  • 3 Medium Size potatoes (peeled)
  • Oil for Frying

Preparation

In a large bowl, mix half a portion of all-purpose flour with the cornstarch and baking powder. Season lightly with salt and pepper as required. Add water and mix it well to get a thick smooth batter. Place the batter in the fridge for 30 minutes to one hour.

Meanwhile, cut the potatoes into a little less than pieces in the shape of the chips (1/2 inch width and 2-inch length). Place the chips into a colander and rinse under running water. Put the washed chips into a pan of cold water. Bring to a gentle boil and simmer for 3 to 4 minutes. Then drain carefully through a colander, then dry with a paper tissue. Keep in the fridge covered with a paper tissue.

Meanwhile, put the fish fillets on a paper tissue. Season lightly with a little salt.

Heat the oil in a deep frying pan. Cook the chips a few handfuls at a time in the pan for about 2 minutes. Once the chips are slightly cooked, not get brown remove them from the pan and drain. Keep it aside.

Put the remaining portion of the all-purpose flour into a bowl. Toss each fish fillet in the flour and shake off any excess.

Now take the batter from the fridge that we kept and put the fish fillet in the batter. Put the fish fillet one by one in the frying pan with hot oil. Use the same frying pan we sued for the potato chips to fry it. Fry it until the batter is crisp and golden, turning the fillets from time to time with a large spoon.

Once cooked, remove the fillets from the hot oil and drain them on a paper tissue. Sprinkle with salt. Cover with greaseproof paper and keep hot.

Now we have to fry the potato again in the pan with hot oil until it becomes golden and crisp. Remove from the oil and drain. Season with salt.

Put the potato chips and hot fish together immediately, accompanied by your favorite condiments, like sweet and sour chili sauce, white sauce, or tomato ketchup.
