Idli - Famous South Indian breakfast
Idli is a steamed food which is very healthy. Idli is a highly nutritious dish, it is made from rice and urad dal. It is rich in Carbohydrates and Protein. Since idli is fermented, it is easy to digest. It is great as it enables the better breakdown of minerals and vitamins in our body, which helps indigestion. Fermented food also increases the availability of minerals in food, helping the body assimilate more nutrition.
Following are the ingredients used for making Idli
Once the batter is ready pour the batter into the circular hole in the vessel. Put water inside the bottom of the vessel and put the idli stand inside it. Keep it for 10 to 15 minutes in a gas stove or in a hotplate. Once it's over open the lid and allow the steam to go out. Wait for another 5 minutes with a spoon take out the Idili. Serve it with Chutney (made out of coconut) or Samabhar (vegetable curry).

Lentils (black gram dhal) - 1 cup
Rice (White Rice) - 3 cups
Fenugreek seeds (Uluva) - 1 teaspoon
Water - As required
Salt - As required
Preparation of the Idli batter
Wash the black gram dhal until the water runs clear and add water and soak it for 2-4 together. Wash the rice also and soak it separately for 2-4 hrs. Add fenugreek.
Wash and grind the gram dhal and rice separately.
Mix up both the batter until everything is blended well. Cover and allow the batter to ferment. It takes about 8-12 hours for fermentation. Add salt as required.
Once the fermentation is over the batter will rise. If the batter is thick add some water and make it the correct consistency to drop in the Idli maker. (Attaching the photo of the Idli Maker)
