Italian spaghetti
Making Italian spaghetti is an easy way to bring the healthy flavors of Italy to your kitchen table.
Ingredients- 3 tablespoons extra virgin olive oil
- 1 large onion finely chopped (about 1 cup)
- 1 teaspoon finely minced garlic
- 4 to 5 medium-size tomatoes
- Salt and freshly ground pepper to taste
- 1 teaspoon dried oregano
- ½ teaspoon dried basil
- Pinch red chili flakes optional
- 1 pkg spaghetti (500 gms)
- Freshly grated Parmesan cheese
- 2 tablespoons slivered fresh basil optional
Boil the tomatoes in a pot and cook it for 5 minutes. When the tomato skin breaks change it into the bowl with cold water. Peel the skin of the tomato and blend it in a blender. In a large saucepan, heat the olive oil over medium heat. In a pan add onion, and sauté for 5 minutes until softened. Add the garlic and sauté for 2 more minutes, until you can really smell the garlic, and it starts to turn golden. Once it is ready, add blended tomatoes, salt and pepper, oregano, basil, and red chili flakes, and mix it well for 1 or 2 minutes. Lower the heat to medium-low, and simmer gently for about 20 minutes. If you cook it for a long, you will get the more concentrated sauce. Taste and adjust the seasonings as needed.
Meanwhile, bring a large pot of water to a boil over high heat, add a couple tablespoons of salt. Put the spaghetti and allow it to become tender, watch to avoid a mushy mess.Drain the spaghetti, keep it in the same pot and pour the sauce we prepared earlier and stir it to combine in a low flame. Transfer to a serving bowl topping with grated cheese, fresh basil, and red chili flakes as desired and serve.
