Potato - Cauliflower Salad
Potato - Cauliflower Salad is easy to make. Fresh bite to this creamy salad is yummy and best to eat.
Ingredients
- 500 g potato
- 500 g Cauliflower
- 1 Medium size Red Onion, slice it in thin pcs
- 3 shallots, finely chopped
- 3 tbsp. extra-virgin olive oil
- 1 tbsp. white wine vinegar
- Salt and grounded pepper
- handful parsley leaves, chopped
Preparation
Boil the potatoes in salted water for 20 minutes until just cooked,
drain and let it cool. Chop the cauliflower into small florets and let it also
cook in salted water for 5 minutes until cooked.
Cut the potatoes into chunks and put them in a salad bowl along with
the cooked cauliflower florets, onion, and shallot. Add enough extra-virgin olive oil, vinegar, and salt and mix it well. Put parsley leaves and pepper, mix
together well and refrigerate until chilled.
