First, you have to fry the Soya chunks and then you can prepare the sauces or you can make it side by. Soak soya chunks in hot water for at least 15 minutes. After that squeeze out the soya chunks and transfer this to bowl. Now, add ginger paste, garlic paste, 2 tablespoon cornflour, refined flour, Kashmiri chilli powder and salt to taste in the bowl containing soya chunks. Marinate it and set it aside for 15 minutes. Now, on a chopping board, finely chop the onion, spring onions and cut the capsicums into cubes. Meanwhile, heat 2 tablespoons refined oil in a medium-sized pan over the full flame. Once the oil is hot enough, lower the flame to medium and, one by one, start pouring the marinated soya chunks. Fry these till they are properly cooked and crispy. (If you are using big soya chunks cut it into two pcs before frying). Transfer it in a plate with tissue paper to absorb up the extra oil.

Now we can prepare the sauce, called it as Manchurian Sauce.

Put a pan over medium flame and add one or two tablespoon refined oil in it. When the oil got hot add finely chopped onions, spring onions and capsicum cubes in it and saute well. Once they are tender, add chilli sauce, vinegar, soy sauce, tomato ketchup and salt to taste in it and mix well. Note that usually, soya sauce has added salt. Add fried chunks in it and cook for 5 minutes.

Dissolve 2 tablespoon cornflour in 1 cup of water and add it to the pan with vegetables and cook till the sauce slightly thickens. Once it becomes thicken, add the fried soya chunks in the sauce and let them cook for some time. Transfer to a serving bowl and garnish with chopped spring onions. Your Soybean Manchurian is ready.
