Vegetable Kabobs

Marinated Vegetable Kabobs are delicious, and a great way to prepare vegetables in multicolor. You can make them on an outdoor grill, or if you live in a flat, use an oven or the stove to grill these. Either way, these will be delicious!

Ingredients
  • 1 cup Carrot sliced into thick rounds
  • 1 cup cherry tomatoes
  • 1 red bell pepper, cut into chunks
  • 1 green bell pepper, cut into chunks
  • 1 red onion, cut into chunks
  • 1 zucchini, sliced into thick rounds

For the Marinade

  • 1/4 cup olive oil
  • 3 cloves garlic, pressed
  • Juice of 1 lemon
  • 1/2 teaspoon dried oregano
  • 1/2 teaspoon dried basil
  • Salt and freshly ground black pepper, to taste

Making kabobs is rather simple, just pick your veggies, marinate them, and thread on a skewer.

Mix all the ingredients for the Marinade. Then combine all the vegetables with the marinade and set aside for at least an hour, stirring to recoat the vegetables several times. While the vegetables are marinating, soak wooden skewers in water. When ready to grill, thread all veggies on skewers and grill on medium heat until softened and slightly burnt. Serve when hot.
